Raw vegetable kale chips coated in vegan cheese on display at Whole Foods recently caught my eye. I had to taste them. Mmm, their tangy coating and sweet mineral chewiness was simply irresistible. I had previously only paid lip-service to the whole raw-food movement, but no one told me how delicious it could be! I bought a container… or three.
The raw food movement has its origins back in the late 19th century, but its only within the past 10 years — with the publication of Dr. Douglas Graham’s 80/10/10 Diet — has it really taken off in the United States. Raw-food advocates, also known as rawists and raw foodists, believe that unprocessed, raw plant foods that have not been heated above 112oF keep all their natural enzymes, which help processing proteins for muscle health and repair. Rawists feel that cooked foods can actually be harmful to the body. A raw-food diet consists mostly of fruits, vegetables, nuts, seeds, sprouted grains and legumes, though some rawists eat animal and fish protein, as long they are unprocessed and organic.
